The celestials in the SRD
The 6 celestials here span CR 2 to CR 21, so the type covers several tiers of play — 4 large-sized and 2 medium-sized. Size matters more than the type label in practice, because it decides reach, grappling and how many of them fit in a corridor. Sort by challenge rating when you are building an encounter, and by size when you are working out whether the fight fits the room.
Running celestials
Celestials are usually allies, quest-givers or judges rather than opponents, and their most useful property is authority. A celestial that makes a demand carries weight no mortal NPC can. If you do run one as an enemy, the interesting version is not that it turned evil but that its definition of good and the party's do not match.
What they need from you
Most celestial statblocks include healing, radiant damage and innate spellcasting, which makes them very strong support for an NPC-assisted fight — and correspondingly hard to kill if the party turns on them. Decide in advance whether the celestial can be fought at all. If it cannot, signal that clearly rather than letting the party discover it by dying.
