The dragons in the SRD
The 43 dragons here span CR 1/4 to CR 24, so the type covers several tiers of play — 11 large-sized and 11 gargantuan-sized, with 21 more across other groups. Size matters more than the type label in practice, because it decides reach, grappling and how many of them fit in a corridor. Sort by challenge rating when you are building an encounter, and by size when you are working out whether the fight fits the room.
Running dragons
A dragon fought on open ground as a statblock is the most common way to waste one. They fly, they have a breath weapon on a recharge, and they are intelligent enough to leave and come back. Play them as predators with a territory: they scout, they strike from above, they withdraw when hurt. A dragon the party has to prepare for is the best encounter in the game; one that stands still and trades attacks is a bag of hit points.
What they need from you
Lair actions and the surrounding terrain are what make a dragon fight distinct, and the SRD statblocks alone will not supply that — decide where the fight happens and what the room does. Also decide whether the dragon can be negotiated with. Most can, they are proud and greedy and they talk, and a party that bargains with a dragon remembers it far longer than one that kills it.
