The giants in the SRD
The 10 giants here span CR 2 to CR 13, so the type covers several tiers of play — 6 huge-sized and 4 large-sized. Size matters more than the type label in practice, because it decides reach, grappling and how many of them fit in a corridor. Sort by challenge rating when you are building an encounter, and by size when you are working out whether the fight fits the room.
Running giants
Giants are the clearest demonstration in the game of why size matters more than CR. Their reach, their rock-throwing and their ability to simply pick a character up change the geometry of a fight. Run them in spaces where their size is an advantage and the party will feel it; run them in a corridor where they cannot swing and the players will rightly feel clever.
What they need from you
Giants have culture, hierarchy and grievances, and they are intelligent enough to negotiate — which makes them one of the better mid-tier alternatives to a fight. They also pair naturally with difficult terrain: rubble, cliffs and anything they can throw. If the encounter is on flat, empty ground, you are giving up most of what makes them interesting.
