The 6 plants here span CR 0 to CR 9, so the type covers several tiers of play — 2 medium-sized and 2 huge-sized, with 2 more across other groups. Size matters more than the type label in practice, because it decides reach, grappling and how many of them fit in a corridor. Sort by challenge rating when you are building an encounter, and by size when you are working out whether the fight fits the room.
Running plants
Plant creatures work best as terrain that turns out to be alive. They are usually stationary or slow, often blind, and frequently able to grapple or restrain — which makes them ambush predators rather than pursuers. The best plant encounters are ones where the party has already walked into the middle of it before anything moves.
What they need from you
Give them cover to hide in and something to grab. A plant in an empty field is nothing; a plant in the undergrowth the party is walking through is a real problem. Fire is the obvious answer and you should let it work, but a burning forest is its own complication, which is a better consequence than simply negating the encounter.
